What is Italian wedding soup?

The wedding soup gets its name from an Italian phrase translated as “married soup”. It’s a reference to the flavors that come together as well as marriage.

Meatballs in a hearty broth with Acini di Pepe noodles, vegetables and vegetables. It’s a bit like the Italian version of Chicken Noodle Soup. The recipe comes together so quickly that it makes a great recipe for busy evenings.

How do you make wedding soup?

If you are looking for a soup that is so easy to make and yet tastes wonderful, this is it! The process and ingredients are so simple:

  1. Prepare and sauté the Italian meatballs.
  2. Fry the vegetables until they are soft.
  3. Add chicken broth and pasta and cook for 5 minutes.
  4. Put the meatballs back in the soup and season.
  5. Add fresh spinach and cook until wilted.

Tips for the best Italian wedding soup

  • Start with a great base: For the best flavor, use homemade chicken broth.
  • Stew soup: Although we prefer to cook the meatballs in a Dutch oven for a stew soup, you can easily bake the meatballs.
  • Pasta types: Acini di Pepe pasta is used in traditional soup. If your local grocery store doesn’t stock the pasta, you can easily replace it with Orzo or Ditalini.
  • Spinach substitute: If you don’t like spinach, you can replace it with kale, like the one we use for Zuppa Toscana, and cook for an additional 5 minutes.
  • Brown the Meatballs: When you sear the meatballs, you just want to brown them on all sides. The meatballs do not have to cook through completely, but are cooked to the end after being added to the soup.
  • Meat replacements: Ground beef and pork are traditional, but you can use a combination of any ground beef for the meatballs. Try sausages like the ones we used in our white cabbage soup.

How to shape meatballs:

You can make large meatballs and make about 18-20 meatballs, or you can make mini meatballs and get about 35-40 meatballs. The mini meatballs take less time to cook.

  2. Dip your hands in cold water and roll each portion of meat into a ball with your hands wet. This will prevent the meat from sticking to your hands.

For the wedding soup:

  • 1
    medium onion
    finely chopped
  • 1
    peeled and thinly sliced
  • 5
    fresh spinach
    Coarsley hacked
  • 2
    Garlic cloves
  • 1
    unsalted butter
  • 1/2
    dry acini de pepe pasta
    or Orzo
  • 8th
    chicken soup
  • 1 ½
    or to taste
  • ½
    ground black pepper
    or to taste
  • 1
    olive oil
  • Freshly grated parmesan
    For serving
  1. In a bowl, mix the ground pork, beef, egg, garlic, parmesan, breadcrumbs, milk, salt, pepper and Italian seasoning. Shape into 18-20 meatballs (or 35-40 mini meatballs).

  2. In a Dutch oven, heat 1 tablespoon of oil over medium / high heat. Once the oil is hot, add half of the meatballs. Cook until the meatballs are browned, turning occasionally. Take the meatballs into a separate bowl and repeat this with the remaining meatballs.

  3. Add 1 tablespoon of butter with onions and carrots and fry until soft and golden brown (6-7 minutes). Then add the chopped garlic and sauté for another minute.

  4. Pour in the broth and add the pasta, bring to a boil and cook for 5 minutes.

  5. Put the meatballs back in the soup, season with salt and pepper and keep at a low boiling point for another 7-9 minutes or until the noodles are cooked to the desired degree of doneness.

  6. Add the spinach and cook for another minute or until the spinach is wilted. Serve with freshly grated parmesan.
