This lunch is for all the sneakerhaed dads and kids out there! It’s school time again and my daughter’s birthday is this week too. She grows up and goes to 8th grade (what ?!) so her lunches have gotten easier yet more sophisticated and focus on different things. This summer she REALLY wanted Nike Air Force 1. If you’re not familiar with these shoes, they’re a classic and always seem to be stylish. I thought it would be fun to find suitable couples for her and me and surprise them with that!

I haven’t seen her this excited about a pair of shoes in a long time, and I got a pair out of the deal. Win, win, right? Well, as I was thinking about what to make her for lunch for her first Monday at school, I thought to myself why not surprise her with a pair of Nike Air Force 1s again. That’s exactly what I did. This lunch is simple but detailed in the right areas. Instead of doing a ton of different things to look at, I tried to keep the spotlight on the classic look of these shoes. I mean as much cheese as I could! Here is what I used for each part of this meal.

I started with a simple sandwich that included bread and meat. I cut the bread to get the shape of the shoe which was pretty easy. I then topped it with provolone cheese. Air Force 1 can come in different colors, but I went for the traditional white. Every detail and part of the shoe is a separate layer of cheese. I put all the cheese on the sandwich.

Then I surrounded the Nike sandwich with blueberries and put celery with a nut-free spread on the bottom. One side is vegetables and the other is a small cup of guacamole. All vegetables add color to lunch, but can also be dipped in the guac!

I topped the guac with an AF1 logo cut out of cheese. I wanted to add the Nike Swoosh logo too, so I made custom Nike tortilla chips. I have just cut the logo out of tortilla in different sizes, sprayed it with non-stick cooking spray, sprinkled some salt over it and baked it for 5-7 minutes at 350 °. I put a few on top of lunch and put the extras on the side so they could all dip in the guacamole.
