Last weekend our two youngest grandchildren Emmy and Hayes spent the night. It was so much fun, but I had to laugh when mom came in a few days later. She said Emmy said to her, “We ate a mountain of peaches at Gigi (that’s me).” It was true, we ate them for breakfast, snacks and dinner! I bought big bags of peaches every time I have a grocery store. They are beautiful, delicious and so … cheap now. I not only enjoyed it alone (juicy, fabulous), but also served it with yogurt, on salads and pizzas and (of course) in desserts – like this wonderful, super-light peach crumb!
I wish we could scoop up a bowl of this delicious sweet treat to enjoy together!
This delicious dessert is an adaptation of ours Ridiculously simple Summer Berry Crisp. I started looking at other peach cobblers, chips and crumble recipes, it hit me – we have a fabulous summer recipe for crunchy / crumble. Why reinvent the wheel when it’s already tried, true and crazy tasty? So that’s it. I was just playing around with the crispy berry recipe and now it’s ready for your summer enjoyment!
What does ridiculously simple mean?
What is going on with this “ridiculously simple” one? It’s one of our favorite series here in the cafe. If you’re a regular cafe fan, just go on to the next part. But if you are new here, you definitely want to know something about ours Ridiculously simple set of recipes. To make the story short and sweet, it’s the type of recipe that our readers love, recipes that are super simple but super tasty and impressive at the same time.
Just because a recipe is simple does not mean that it deserves the prestigious nickname “Ridiculously Simple”. In fact, there are strict guidelines that a recipe must contain in order to make the cut. These are the ridiculously simple “rules”:
- A recipe, the compilation of which requires minimal effort and minimal practical time. (Rest, climb or rest times are not taken into account.)
- It is also one that delivers fabulous, super tasty results, that is results that have taken a lot of time, talent, skill and / or hard work.
- Ridiculously simple recipes have to work well on busy days when time is short and expectations are high.
- And finally, ridiculously simple recipes are perfect for entertainment, mostly because of the first two properties. They relieve dinner parties and gatherings of families and / or friends and give you more time to enjoy your guests. Bottom line? They are super simple, something that everyone can do.
This ridiculously simple peach crumble is certainly all of the above!
What is almond flour?
The “crumble” of this Easy Peach Crumble consists of all-purpose flour, almond flour, sugar and melted butter.
If you have never baked with almond flour, you can let yourself be pampered. I think baked goods have a really “fine” taste. I am thinking of a European café / bakery.
What is almond flour? They are simply almonds that have been finely ground to form a floury mixture. You can buy almond flour in most major foods in the baking department, in specialty stores like Whole Foods or Fresh Market in the bulk department. It is also available on on-line.
You can also make your own almond flour by finely grinding blanched almonds in a food processor or Vitamix. Almond flour is made from blanched almonds (which have no peels). You can also find it Almond flour in the grocery store, which differs from almond flour in that it is coarser and contains the almond shells. For this recipe, you want almond flour.
This is my summer dessert recipe. I’m going for a family reunion today. I think you will love it as much as we do. So take “a mountain” of peaches with you. They are just so delicious. Surprise the family or some friends with this simple peach crumb and wait for the rave reviews!
Cafe tips for this Easy Peach Crumble
- The peaches don’t need to be peeled for this recipe. After 45 minutes in the oven, they appear to melt in the sauce formed.
- As mentioned above, this recipe requires almond flour. If you can’t find almond flour or don’t want to go to the store to pick something up, this recipe also works with all-purpose flour. The taste will be a little different, but it will still be tasty.
- Sometimes I use one less peach and add a cup of fresh raspberries. So good! And it gives the fruit filling a really nice color.
- It is easy to prepare this dessert in advance. Combine the sugar-flour mixture for the peaches and place them in a covered container. Make the crumble, put it in a zippered bag and cool it. For baking, simply cut the peaches into slices, sprinkle with the peel, the lemon juice and the flour-sugar mixture. Stir gently, put in the oven and let the delicious magic begin!
- I use salted butter for this recipe. If you use unsalted salt, add a pinch of salt to the crumble mixture.
- I find it easiest to take a handful of topping and sprinkle it over the fruit.
- The fruit layer bubbles up towards the end of the baking time. If you place the casserole dish on a tin pan, it will prevent confusion in the oven if the fruit bubbles over the edge of the pan.

Ridiculous Simply Fresh Peach Cumble

For the fruit layer:
- 3rd tablespoon All-purpose flour
- ¼ Cup sugar
- 8th medium-sized peaches cored and sliced (no peeling required)
- finely grated zest of 1 medium-sized lemon
- 2nd tablespoon fresh lemon juice
For the sprinkle topping:
- ½ Cup butter (I use salted)
- ¾ Cup Almond flour
- ½ Cup All-purpose flour
- ¾ Cup sugar
Preheat the oven to 350˚F. Line a sheet pan with foil or parchment paper for easy cleaning and set aside.
Place the peaches in a flat 2 liter baking dish. Sprinkle with lemon juice and lemon peel. Mix the flour and sugar in a small bowl and sprinkle over the peaches. Stir gently to distribute the flour.
Place the butter in a medium-sized, microwave-safe bowl. Cover with a paper towel and microwave for 1 minute at high power.
Put the all-purpose flour, almond flour and sugar in the melted butter. Stir with a fork until crumbs form. Take a handful of topping and sprinkle it over the peaches. Place the pan on the prepared metal pan.
Bake for 45-55 minutes or until the topping is light golden brown and the peaches are bubbling. Check after 40 minutes and cover with film to see if the topping is too brown, but the peaches are still not bubbling.
Serve warm in bowls with a scoop of vanilla ice cream or a dash of cream. Delicious!
