This simple no-bake cheesecake recipe is one of our most popular summer desserts. It is smooth and creamy and goes perfectly with fresh fruit. You also don’t have to heat the oven.

Easy No Bake Cheesecake

To create the recipe, you need an 8-inch or 9-inch springform pan. You don’t have a springform pan? Use a 9-inch cake plate and make a no-bake cheesecake cake.

I make the no-bake cheesecake filling in a blender, but you can also use a hand mixer. The end product has to be hit hard.

Ingredients:

  • 1½ cups of Graham Cracker Crumbs
  • ⅓ cup of packaged brown sugar
  • ½ teaspoon of ground cinnamon
  • ⅓ cup of butter, softened or melted
  • 2 (8 oz.) Packs of cream cheese, softened
  • 2 teaspoons of vanilla extract
  • 1 pint of heavy whipped cream
  • ⅓ cup of powdered sugar
  • 2 cups of chopped fresh fruit topping (optional)

Directions:

For the crust:

Mix Graham Cracker Crumbs, brown sugar and cinnamon in a small bowl. Add melted butter and mix until evenly mixed.

Press the Graham Cracker mixture into the bottom of an 8 or 9 inch Springform pan.

For the filling:

Beat the cream cheese and the vanilla extract together in the bowl of your blender (or a large bowl). Add sugar and mix until blended.

Add whipped cream and beat until peaks form.

Scoop the cream cheese mixture into the crust. Chill 4 hours or overnight until the cheesecake is firm.

To serve, remove the side of the springform pan and cut into 8 to 12 slices. Top with fresh fruit, canned cake filling or canned fruit as desired.

How do you thicken a no-bake cheesecake?

Some recipes use gelatin to thicken, but the secret to success with this recipe is the right whipping of your cream.

When your no-bake cheesecake filling is ready in the pan, it’s stiff and not runny. Think of “whipped cream” or “cool whip”, but a little heavier because of the cream cheese and the sugar.

Second, you want to give the cheesecake enough time to cool down and set. If you rush to serve, the cheesecake will be set soft.

Don’t worry if you start serving and find that you haven’t hit or chilled it enough. Simply scoop it into serving bowls or parfait glasses, add fruit, and name it a cheesecake parfait. The taste is still delicious.

Can I freeze the cheesecake?

Yes, it’s okay to cook your no-bake cheesecake up to a week in advance and keep it in the freezer. Wrap the pan tightly in plastic wrap or cut slices and store in an airtight container.

You can serve it frozen or thaw it in the fridge for a few hours before serving. I recommend spending time in the fridge so that the cheesecake isn’t too firm to enjoy easily.

Customize your No Bake Cheesecake

This recipe is light and creamy with a mild taste that is suitable for any occasion. Try different flavors and toppings to make the recipe your own.

July 4th – Top with strawberries or raspberries and blueberries for a patriotic dessert.

St. Patrick’s Day – use 1 teaspoon of mint extract and vanilla extract and a few drops of green food coloring. Fold in 1/2 cup of mini chocolate chips or drizzle with chocolate sauce.

Lemon Blueberry Cheesecake – Replace the vanilla extract with 2 teaspoons of lemon juice and add fresh blueberries or blueberry pie.

For Thanksgiving or Christmas – top with cranberry sauce.

Don’t bake Cheesecake popsicles by reducing the amount of crust by half and stirring the crust, the filling crumbles. Scoop the filling in popsicles and freeze. If desired, demold popsicles and dip in chocolate before serving.

What can I use instead of cream cheese?

For baked cheesecake recipes, try cottage cheese that is pureed and drained overnight.

For overnight cheesecake recipes, try yogurt or kefir that are sifted overnight. If you have cream cheese spread it will probably work too.

These options don’t offer the same wealth as cream cheese, but can be used if necessary.
