Nungu rose milk is an amazing summer coolant as well as a super delicious drink that can pamper your taste buds.

Nungu was a regular summer delight at home in childhood. We didn’t have a refrigerator and only occasional sugar treats were like Rasna or Kuchi ice cream from the push cart ice cream vendors. Otherwise, it was normal, natural summer coolants such as Elaneer (delicate coconut), Nungu, etc.

After the marriage I realized that fresh Nungu is a luxury. We buy it every time we travel. For someone who bought palm fruits from well-known neighbors who harvest them from their country, treating Nungu as a precious elixir was a new experience. Even worse, after I came here and bought palm fruits from the wet market, she wasn’t tender at all. Just buy and throw because it used to be so hard.

I have never visited small Indian vegetable shops, so I have not bought any imported from India. Only once a year can I eat only 1 or 2 during our trip to India. This year, too, is gone. When I was looking for something, I found that this Nipah palm fruit is used here in Singapore. I’m not sure we can get it fresh, but I found a can.

I thought about trying it, although I had no intention of buying it again as it is canned. Vj was not at all convinced to buy, but I really wanted to give it a try, at least for blog posts. So I got a pack and made some recipes. This Nungu rose milk was really good with it.

I will recommend using fresh palm fruits as this is nowhere near the taste, taste or texture. Still, it was like rose milk loaded with Nata-de-Coco. And it smelled of Padhaneer too. I love Padha Neer, but not a palm fruit with a Padhaneer taste. This is known here in Singapore as Attap seeds. Also rose milk as a bandage. Can be translated as Attap Bandung Drink.

  • 1/2 Cup milk cooked & chilled
  • 2nd tablespoon rose syrup I used F&N
  • 1/4 Cup Palm fruit roughly pureed
  • 1/4 Cup crushed ice

  • Crush palm fruit when tender. Mine wasn’t soft, so I pulsed with Mixie.

  • Collect all the ingredients. Put crushed ice in a serving glass. Then the palm fruit.

  • Top it with boiled, chilled milk. Finally add rose syrup.

  • Mix and enjoy immediately.
