Who would have thought that I would make a new Italian cake that contains absolutely no eggs, milk or butter? And here I share it with you.
This cake with a bowl is very popular in Italy. Italians love to eat or dip it in for breakfast with a cafe latte (and the Italian does just that). Or share it with friends over a strong espresso in the afternoon. No sharing these days, but I hope soon.
How to make a water cake
Sift the flour, sugar, baking powder and salt into a large bowl.
Add water, vegetable oil and vanilla and beat at medium speed until everything is completely mixed.
Pour into the prepared cake pan and bake for about 40-45 minutes.
Allow to cool completely and dust with powdered sugar.
Is seven necessary?
It is important to sift the dry ingredients before whipping, as this will give the water cake the tender and lighter crumb you want. I used all-purpose flour, but if you have pastry flour, that would work too.
How to make homemade icing sugar
In a blender, add 1 cup of granulated sugar and 1 tablespoon of cornstarch, the cornstarch is used to keep the sugar dry. Mix until very fine, about 4-5 minutes. Store the sugar in an airtight container.
Different ways to do it
This is easy to change cakes by adding the zest of a lemon or orange if you prefer or even some ground cinnamon.
The perfect pans
I used a 24 cm tube pan and a 9 inch loaf pan, both were perfect, my daughter preferred the loaf pan. But if you prefer an 8 or 9 inch cake pan, it would definitely work too.
How to store the cake
The cake should either be kept in a covered cake tin or in a container. It can be kept for up to three days at room temperature. You can also freeze it, wrap it tightly in plastic, and then place it in a freeze-proof bag or container. It can be kept in the freezer for up to three months.

- 1 1/4 cups Powdered Sugar / Powdered Sugar (150 grams)
- 2nd teaspoon baking powder
