Easy Sheet Pan Dinner Recipe
If you’re looking for a simple dinner and a way to mix things out of your usual tin pan chicken and vegetables, this is it hot dog The recipe that is ready in 45 minutes is just right.
This tin dinner is a great dish to clean your product drawer. You can combine it depending on what your family likes or what you have on hand (or can find in stores).
The sausage and potatoes develop a great taste because they are seasoned with Italian spices, salt and pepper and the taste of the roasted red onions perfumes them wonderfully.
If you line the pan with foil, cleaning is as easy as throwing away a piece of foil. I love that part.
The 5 main ingredients you need
- Pre-cooked sausage of your choice
- Red onion
- olive oil
- Italian spice
What kind of sausage to use?
You want to use pre-cooked sausage. You can use chicken, pork, turkey or beef sausage. Or kielbasa or polska kielbasa. Look for something U-shaped instead of left.
I used a trademark “Hickory smoked chicken sausage” because that was what my grocery store had in this surreal time of life when shopping felt like an episode of Chopped and you literally have to count on what’s in your cart. Or in this case, whatever your business has at your disposal.
What kind of vegetables to use?
I used two very large ones for the vegetables Red potatoes and a Jumbo red onion. That was available.
You could install:
- Cherry tomatoes
- Green beans
- Or your favorite vegetable
Note that it takes longer to cook root vegetables such as potatoes and carrots, so you should cut them into small pieces.
If you add thin vegetables like green beans or asparagus, add it in the last 10 to 15 minutes of cooking so it doesn’t overcook.
Spice and garnish ideas
Although I just stuck to Italian spice to get this super basic and use a spice that most likely everyone has in their pantry, you are welcome to add:
- Garlic powder
I garnished with spring onions because I had them on hand, but fresh or dried parsley would work well too.
You could also add a final touch of freshly grated parmesan, as I did here.
Can I use frozen vegetables instead of fresh ones?
Ideally, you want to start with fresh vegetables for this sausage dinner.
And normally I would say no to frozen, but I know that many of us are currently relying on our freezers so you can play and try it by ear – especially if it’s something like chunky frozen broccoli, cauliflower, or potatoes – which I think would work pretty well.
Can I use fresh sausage instead of pre-cooked?
You can probably, but you need to brown it first before putting it in the metal pan. However, I haven’t tried it myself, so I can’t say for sure.

- a 13-ounce pre-cooked sausage or Kielbasa (chicken, pork, turkey, or beef sausage or Kielbasa; I used hickory-smoked chicken sausage), cut into 1/2 inch rounds
- 2 pounds of Russet potatoes (or your favorite potato), diced in 1 inch cubes
- 1 large or extra large red onion, cut into thick pieces
- 3 to 4 tablespoons of olive oil or more if desired
- 2 teaspoons of Italian spice or to taste
- 1 teaspoon of kosher salt or to taste
- 1/2 teaspoon of freshly grated black pepper or to taste
- freshly grated parmesan, optional for garnish
- Preheat the oven to 425F (use convection if you have it). Line a baking sheet with aluminum foil to make cleaning easier if desired.
- Add the sausage, potatoes, onions, drizzle them evenly with olive oil, season them evenly with the Italian spice, salt, pepper and toss them with your hands to combine and spread them evenly.
- Bake for about 40 to 45 minutes or until potatoes are tender and have as much color as desired; Stir halfway through the baking process to ensure even cooking. Start checking the cooking space after 30 minutes, as all ovens, vegetables, etc. vary.
- Sprinkle with Parmesan and serve immediately. The dish remains airtight in the refrigerator for up to 5 days or in the freezer for up to 4 months.
