I was looking for some new recipes for acorn and butternut squash when I saw three different recipes for filled acorn squash in one week! I thought that was a sign that we should try this and boy did we love it!
I finally decided this pin and actually followed the recipe almost exactly!
The only changes I made were:
- Sprinkle the pumpkin with some cinnamon before frying
- only spray the pan with cooking spray and not with the pumpkin, so I left out the olive oil
- with button mushrooms instead of the baby bellas.
Because all the ingredients contained so few points, fat Coby Jack cheese escalopes (only 1/4 cup each) were used and the entire meal consisted of 4 points. (You can do it with 1/4 cup of fat-free sliced cheese for just 1 point – 1!)
I couldn't believe what I was allowed to eat. I only like generous servings and fill meals that contain little points.
Packed with apple, cinnamon, pumpkin and turkey, every bite tasted like autumn! We also had very generous portions, as you can see here. I even had enough of the "stuffing" I put in Tupperware with a bit of leftover rice for another low and filled lunch the next day.
