These are really amazing crispy keto pork fillet bites.

The coating consists of fried rinds! 0 carbohydrates, 100% delicious!

I have not made crispy fried meats (like panco crusted pork chops) for ages. I used to roast pork tenderloin following this country fair pork recipe. But since I consume little carbohydrates, I avoid the dough and the breadcrumbs.

Til today. I found a great replacement.

Incredibly, rinds that were ground in the food processor make a super panko crust.

This meal can be summed up in one word: Crunch.

Are rinds keto?

Yes! Rinds are fried or roasted skin of a pig. And since they have no carbohydrates, they are perfect for someone who is on a low carbohydrate or low keto diet.

You can definitely use these to make a delicious chicken or pork chop. But I have decided to do something a little different.

My supermarket often has a great sale of pork tenderloin. Usually it is a purchase, a free sale. I love it when I start this sale because while pork chops and roast pork are best salted for tenderizing, pork tenderloin is a nice, tender piece of meat. No need to salt.

This shortens the preparation time considerably. Fast and easy.

The mild aroma of pork, however, must be spiced up a bit. So I wanted to see if I could liven up the filet with a few pork tartlets.

And so these crispy keto pork fillet bites came into being.

And how did you come ??? Drum roll please.

Impressive! Just wait until you taste them.

What you need to prepare Keto Pork Tenderloin Crispy Bites

  • Pork tenderloin (These are usually sold in packs of two.)
  • rinds
  • eggs
  • Salt-
  • smoked paprika
  • garlic powder
  • and avocado oil

How to make keto pork tenderloin crisps

First cut each filet into slices.

Slice pork tenderloin

Then turn rinds into crumbs in your food processor.

Preparation of the rind crust

Next, make a bowl of beaten eggs and a bowl of your rind crumbs and your spices.

Now dip your pork slices in the egg and then in the spicy rinds.

And we are ready to roast.

WHAT IS THE HEALTHY OIL FOR FRYING?

Excellent question. I fry these pork slices avocado oil as I do with my salmon-cake. Refined avocado oil is very nutritious and rich in antioxidants.

Whether you choose avocado oil or extra virgin olive oil, you do not have to have a high flame. Just hold the flame on medium and make sure the oil does not start to smoke.

I cook them for 4 minutes on each side and they are ready to enjoy!

Pro tips and recipe hints

  • Fry your pork in batches so as not to overfill the pan. If there is not enough space in the pan, the pork is steamed rather than nicely browned, spicy and crispy.
  • Find rinds with the snack chips in your supermarket. You need a cup of ground rinds per pound of meat.
  • I seasoned my rind with smoked paprika, garlic powder and salt. Would you like to add grated Parmesan cheese? Go straight ahead. How about rosemary, thyme or oregano? Feel free. It depends on you.
  • Serve alone or with your favorite topping.
  • This recipe also works with chicken breast chops. However, I recommend hammering every chicken breast with a meat tenderizer as it may tend to be a bit chewy.

  • 2 Pork fillet (8-12 ounces each) Usually they are sold in packs of two
  • 2 Eggs, beaten
  • 2 cups of ground rinds
  • 1 teaspoon from salt
  • 1 teaspoon smoked paprika
  • 1.2 teaspoon garlic powder
  • Avocado oil for frying

  • Cut each filet across and set aside.

  • Then place your rinds in the bowl of your food processor equipped with the big cleaver. Process until the rinds look like breadcrumbs.

  • Next, set up two bowls. A bowl of beaten eggs and one with your pork crumbs. Add salt, smoked paprika and garlic powder to your pork rind crumbs and stir.

  • Dip each pork slice in the egg wash and spread the spiced pork rind on both sides of each fillet slice.

  • Heat the oil in your pan until it is hot, but do not smoke. Fry the coated fillet slices on each side in stacks for 4 minutes. Drain the fried pork slices on a plate with paper towels.

  • Garnish with parsley. Serve alone or with your favorite topping and enjoy.
