Leftovers, with few exceptions, last four days in the fridge. That means if you’ve got turkey, miso stuffing, garsquashrooms and so on chilling in the icebox, today is the day to polish them off.

You could also freeze them, of course; if you were smart, you froze individual portions as you were cleaning up from dinner on Thursday. (I was not smart, and now have a pint of gravy to quickly drink.) Hopefully you got everything into the fridge soon after dinner; two hours from cooking time is the standard rule but four hours is usually okay.

Some things last longer: anything that’s packed with sugar, like a pie or a jar of cranberry sauce, is probably good for longer. (Check stilltasty.com for specifics.) And next year, either eat your leftovers faster or invite more friends.
